Catering and hospitality students at Coleg Sir Gâr provided a dining experience at their training restaurant where they worked with industry partners and some of the top chefs in Wales.
Students created the menu with John Retallick, national secretary of the Culinary Association of Wales, who oversaw the kitchen, working with Will Holland, a Michelin-starred head chef who works at Coast Restaurant and Wales’ Junior Chef of the Year 2016, Ben Mitchell, together with Chris Bason, senior trainer for Cambrian Training Company.
The aim of the evening was to promote the catering and hospitality industry as a careers pathway, enticing diners with a mouth-watering five-course table d’hôte menu which included Welsh rump of lamb and a Welsh whiskey liqueur jelly with pineapple mousse.
The evening was also supported by Springboard’s Gareth Edwards, Wales programme manager for the charity which promotes and helps young people achieve their potential in the hospitality and tourism industry.
Linda Thomas, head of catering at Coleg Sir Gâr and sector skills champion for the Welsh Government-funded Inspiring Skills Excellence in Wales project, said: “We were delighted to welcome such a talented group of industry professionals to work with our students.
“Catering and hospitality plays a significant part in Wales economy, so it’s important we are promoting career opportunities and training young people to develop professional skills.”
